Can You Freeze Tofu?

Not only can you, plenty of cooks freeze tofu on purpose. Because tofu is mostly water, freezing turns that water to ice, and on thawing it leaves behind a network of holes — the block comes out chewier, firmer, and more porous, so it grips marinade and crisps better. If you want it silky and smooth, skip the freezer. Frozen firm tofu keeps for about 3 to 5 months.
Can you freeze tofu?
Yes — with caveats- Choose firm or extra-firm tofu; drain it and blot off the surface water with a clean towel.
- Cut it into slabs or cubes, or freeze the whole block — smaller pieces thaw and absorb flavour faster.
- Lay the pieces apart on a tray and freeze until solid, then transfer them to a sealed bag or tub.
- Press out the air, label and date it; you can also freeze tofu in its opened pack topped up with water.

Why does tofu change texture when you freeze it?
